This delicious chicken dish is super easy, and only takes 30 minutes to cook!
In a large pan that has a lip sauté one onion in a small splash of olive oil on low heat until they are softened a bit, this step is done without the lid on.
Add one cup of white wine, any kind you like or have. Then add in a 1/3 of a cup of lemon juice. You now want your heat to be on a simmer.
Now place you chicken in that pan. Make sure you have enough room for everything to cook evenly, depending on the size of your pan, four pieces is usually the most I would put in. Lay your pieces in the pan, and sprinkle with paprika. Make sure your chicken is almost fully covered with the paprika. You can dash with salt or pepper is desired, but not required as the olives portion of this recipe has a lot of flavor and doesn’t call for any additional seasoning.
Add in a large squeeze about 2 tablespoons of the mixed Italian herbs from the tube. Great flavor, and these are preserved in olive oil so they will last much longer than fresh, it is a go to recipe addition in my house!
Now add in all of your olives, as many as you would like. I have started to use a bruschetta or tapenade because the olives are already chopped and there is a variety of types. I put in 3 spoons full of the bruschetta, and just to add a little more depth I put in about 5 garlic filled olives.
Mix everything together and flip the chicken over, add more paprika to the opposite side, and spoon on some olives and onions so the flavors can mix.
Now cover the pan and let this sit for about 12 more minutes on low heat. Try not to check on it too much because it will dry out if you keep opening the lid.
Once your chicken is at about 145 degrees, (check it in the 12 minutes) you can add your tomatoes. You can cut them in half or not, I don’t cut mine because my husband doesn’t like them, and this makes it easier for him to avoid. You can use any tomatoes you like or have, they all taste great!
Cover the pan again and wait about 5 minutes until the tomatoes have softened and the chicken reaches 165 degrees. Then plate and serve with all the delicious bits on top! I serve this alone with a few slices of bread, you can make some rice to serve along side if you rather. This can easily be made in a croc pot, just take all of your ingredients and place them in the croc pot on low for 6-8 hours. The one thing to do is to increase the liquid so nothing drys out.

1 large pan with lid or croc pot (increase liquid by 2x for croc pot)
