This simple dinner is so delicious, easy, and under 100 calories! Can you believe it!
First you need one spaghetti squash cut in half, and make sure to scrape out all the seeds!
Place the squash cut side down on a coated baking sheet that has about an inch of water at the bottom. Place the squash into the oven at 350 for 1 hour!
While the squash is cooking you can brown up some sausage or chicken, whatever protein you prefer in a pan.
Steam some broccoli!
And grate some parmesan cheese!
Once the squash is done take this out of the oven and scrape the inside with a fork. You will see now exactly why this is called spaghetti squash!
Now its time to put it all back together! Sausage and broccoli in a pan with some white wine. Sauté this together with the scraped spaghetti squash.
I like to put my squash standing up in the pan so it scrapes right into the pan.
Place the parmesan cheese into the pan and mix this all together!
Put this delicious mixture back into the squash and place some mozzarella on the top, and put these back in the oven for 10 minutes!
Once they are done the cheese will be melted and everything will be so delicious!!! If you want your cheese to brown up turn the heat to 425 instead of the current 350 degrees.
The best part is you can change out the protein or the veggies to whatever you like, so try some things to mix it up and have fun with it! The spaghetti squash is just the base to whatever creativity you want to try! Enjoy!
