PINEAPPLE CASSEROLE

Trust me I know, the combination of ingredients seems funny, but give it a try! It’s the perfect combination of sweet and salty and is delicious.

This casserole is a classic Southern dish and here’s how to make it by the recipe, read below to see how I changed it just slightly for my taste.

RECIPE:
2 20oz cans pineapple chunks in juice drained (RESERVE 6 TBSP LIQUID)
1 1/3 Cup sugar
5 Tablespoons flour
1 Cup shredded cheddar cheese
1/4 cup melted butter
1 Sleeve Ritz crackers crushed

Mix together flour, sugar, and reserved pineapple liquid.
Add pineapple chunks and mix all three together.
Place in a baking dish and top with cheddar cheese.
Top with Ritz crumbs and drizzle over melted butter.
Bake at 350 degrees for 30min.
*** For my recipe I used pineapple tidbits, which was recommended by Ivy when I sent her a DM on Instagram about the recipe.
*** The first time I made this I did the full sugar amount, for me it was a bit too sweet as the pineapple is already sweet on it’s own. I prefer to make it with only 1/3cup sugar or none at all!

Give it a try, this is so yummy and according to my husband pairs great with ham. I don’t eat ham so I’ll take his word for it. Let me know how you like the recipe!
